The noodles are available in several varieties, so you can achieve precisely the consistency and flavor your dish requires. The boat noodles are created for the spicy Thai boat noodle soup (kuay teow rua) with Tom Yum and Yentafo, but they also work well in clear soups, stir-fries, and cold noodle salads. The rice vermicelli is light and absorbs flavor, while the bean vermicelli (glass noodles) becomes transparent and slightly elastic after soaking – perfect for rolls and salads.

Soak the noodles in hot water until soft, and cook them briefly before serving so they don't become mushy. Rinse them in cold water if they are to be used in a cold dish.
