      Dried Whole Shiitake Mushrooms - 100 g (>4 cm)

      Dried shiitake mushrooms are a classic ingredient in East Asian cuisine and have been used for many generations to enrich dishes with a deep, complex flavour profile. The mushrooms are sold in whole pieces, larger than 4 cm, which provides a good and meaty texture after rehydration. Before use, place the mushrooms in a heatproof bowl, cover with boiling water, and steep for approximately 20 minutes until they are soft and juicy. Alternatively, they can be soaked in lukewarm water for 15 minutes, preferably twice, to achieve the best result. Remove the stem before cooking, as it is tough and not suitable for eating. Once rehydrated, the mushrooms can be used in a wide range of dishes such as soups, noodle broths, stir-fries, rice dishes, stocks, vegetable dishes, and as fillings in dumplings or spring rolls. The taste is intense and umami-rich with nutty and slightly earthy notes that add an extra dimension to any dish. The texture after cooking is soft and juicy with a slightly meaty sensation, making the mushrooms a popular choice in vegetarian and vegan dishes. The drying process concentrates the mushrooms' natural aromas and releases guanylate, a natural flavour enhancer that occurs during drying and rehydration.
