Cook udon or ramen in a hot dashi or miso broth with vegetables and protein, or serve cold soba and somen noodles with a dipping sauce in the summer. The soy sauce and mirin are the cornerstones of teriyaki glazes, marinades, and dipping sauces, while the gyozas can be pan-fried until crispy and then steamed until cooked through.
Cook the noodles according to the instructions and rinse them in cold water if they are to be served cold. Fry the gyozas with a lid on and a little water to make them crispy on the bottom and juicy inside.
