Udon are thick, white wheat noodles from Japan, known for their soft and slightly chewy texture. They are the heart of everything from steaming noodle soups to quick stir-fried dishes. Fresh udon from Sautao only needs to be heated briefly and is perfect in a clear dashi broth with spring onions and tempura for a classic kake udon. The thick noodles absorb flavour in a yaki udon, where they are stir-fried with soy sauce, cabbage, and meat. If you want it quick, Nongshim cup noodles are ready in minutes with boiling water.
Serve udon in a hot soup on cold days, or stir-fry them with vegetables for a satisfying everyday dinner. The fresh noodles should be stored in the refrigerator, while the dried ones keep for a long time in the cupboard.
