Sai Ua is a traditional, spicy pork sausage with roots in Northern Thai cuisine, particularly associated with the Chiang Mai region. The sausage is composed of 78% pork combined with a wide range of aromatic ingredients, including lemongrass, galangal, kaffir lime leaves, spring onions, red onions, and coriander, which together create a deep and complex flavour profile. The product is heat-treated and stuffed into natural pig casing, giving it a firm and juicy texture with a crispy surface when cooked. The flavour is rich and herb-dominated with distinct notes of umami from fish sauce and oyster sauce, as well as a mild to medium spiciness from the spices. The sausage is easily prepared by grilling or frying until thoroughly heated and golden brown with a crispy outer crust.
