The paste contains ingredients such as shallots, garlic, dried red chilli, lemongrass, kaffir lime zest, galangal, cinnamon, nutmeg, cumin, coriander seeds, and turmeric, which together create a complex and well-balanced flavour profile. Turmeric is responsible for the characteristic golden colour that defines yellow curry. The paste is used as a base for curry dishes with chicken, fish, potatoes, or vegetables, and it can also be used in soups, stews, and marinades. For preparation, coconut milk is heated, then the curry paste is added along with the desired protein and vegetables.
